A gooseneck narrow enough to place water where you want it and a PID that holds the set temperature rather than approaching it. Both matter more than people expect: pour rate is the variable you control most directly, and a kettle that drifts five degrees during a brew moves the extraction under you.
If you brew immersion only, a plain steel kettle and a thermometer does the same job for a fifth of the money and we will tell you so on the phone.
What it is bad at
Slow to boil compared with a supermarket kettle, and it is not the thing to make a pot of tea for six people with. Precision costs throughput.
